Tikka Masala

Recipe per 400 g chicken fillet portion.
Marinade ingredients:
- natural yogurt, 150g
- garam masala, ½ tsp
- oil, 1 tbsp
- ginger, cinnamon, hot bell pepper, and cumin 1 teaspoon each
Sauce ingredients:
- tomato puree (passata), 500- 600ml
- garlic, 2 crushed cloves
- sugar, 1 tsp
- clarified butter, 2 tablespoons
- hot and sweet paprika, sugar, cumin powder, 1 tsp each
- wine vinegar, 1 tbsp
- cream, 5-6 tbsp
Cut the chicken fillet into cubes approximately 2 cm in size. Lightly salt the meat and mix it with the marinade ingredients. Set aside for several hours (or refrigerate overnight). Remove the meat from the marinade and remove its excess. Fry the meat in the pan for about 2 minutes.
In a saucepan, melt butter and sauté garlic. Then, add the remaining sauce ingredients and cook for 10 minutes. Finally, add the chicken and cook over very low heat until tender – about 15 minutes. Serve with rice or a baguette.
