Mini chicken burgers with halloumi cheese, pastrami (smoked beef), pickled cucumber and BBQ sauce with cilantro

Recipe for 6 servings
Ingredients:
Chicken leg meat patties:
- Chicken leg meat, skinless and boneless – 720 g
- White onions – 120 g
- Fresh garlic – 18 g
- Dry wheat roll – 120 g
- Milk – 120 g
- Hen egg – 60 g
- Salt – 12 g
- Ground black pepper – 6 g
- Smoked paprika – 6 g
- Canola oil for frying – 120 g
Toppings:
- Halloumi cheese – 300 g
- Beef pastrami (smoked) – 180 g
- Pickled cucumber – 180 g
BBQ sauce with cilantro
- BBQ sauce – 240 g
- Fresh coriander – 30 g
- Lime juice – 18 g
- Honey – 24 g
Buns:
- Mini burger buns – 6 pcs. (about 300 g total)
How to prepare:
Burger patties
Finely mince or chop the meat. Mince the onion and garlic. Soak the dry roll in milk and drain. Combine all ingredients until a homogeneous mass is obtained.
Form 6 even patties. Fry in hot oil at about 170-180°C until golden in color and internal temperature min. 72°C.
Toppings
Slice halloumi and grill on a dry plate until golden strips form.
Heat the pastrami briefly on the grill plate. Cut the pickled cucumbers into slices.
BBQ sauce
Finely chop the cilantro. Combine all ingredients thoroughly and set aside for a few minutes for the flavors to meld.
Assembling the burger
Cut the buns and toast them. Arrange the chicken patty on the bottom, followed by halloumi cheese, pastrami and slices of pickled cucumber. Put a portion of BBQ sauce with cilantro on top and cover with the top of the bun.
