Ga Kho Gung using European chicken
Try making Ga Kho Gung using European chicken. Boneless thigh or leg meat will be best.

Ingredients:
- chicken meat, 750g
- garlic 2 cloves, crushed
- shallot onion, 1 piece, finely chopped
- ginger, a 4 cm piece, thinly sliced
- oil, 1 tbsp
- sugar, 1.5 tbsp
- chili peppers, 2 pieces, thinly sliced
- fish sauce, 1/3 cup
Mix the chicken pieces with fish sauce, shallots, and garlic. Marinate for at least 30 minutes. In a thick-bottomed pot, heat the oil and sugar. Cook for 1-2 minutes, until the sugar caramelizes to a dark amber color. Put the marinated chicken in the sugar and mix well. Cover with a lid and cook covered for 6-8 minutes. Add water to ¼ the height of the chicken in the pot. Add ¾ of the ginger and cook for a few more minutes. Finally, add the peppers and cook for a minute. Serve over rice with cucumber slices and cilantro leaves.
